More Mango Pickle!


Having remembered how good this mango pickle is, I made a double batch yesterday. Only differences from the previous recipe is that I have started grinding the salt up with the spices, as it is quite coarse, and also I used some proper lump form asafetida instead of the tasteless powdery kind (I was so happy to find that in the shops!). Cannot wait for it to be ready - I am already worried that the previous batch will run out soon!

I feel that pickle mania may be coming on, which is a shame as it is not very sunny outside, and I always find the sun to be very useful in maturing pickles.
